Okay, so yesterday I decided to grill some steaks. I’m no expert, but I’ve learned a few things along the way that I think make a big difference. I wanted to jot them down so I don’t forget, and maybe it’ll help someone else out there.
Getting Started
First, I took the steaks out of the fridge. I think they were New York strips. I let them sit on the counter for about 30 minutes. I’ve heard this helps them cook more evenly. While they were warming up, I got the grill ready.
Prepping the Grill
I have a gas grill, so I turned it on and set it to high. I wanted to get it really hot. I let it heat up for a good 10-15 minutes with the lid closed. I find this helps to create a nice sear on the steaks.

Seasoning the Steaks
While the grill was heating, I seasoned the steaks. I’m a simple guy, so I just used salt and freshly ground black pepper. I made sure to season them generously on both sides. I’ve tried fancy rubs before, but honestly, salt and pepper are my go-to.
Grilling Time
Once the grill was screaming hot, I put the steaks on. I made sure not to overcrowd the grill, giving each steak plenty of space. I closed the lid and let them sear for about 4-5 minutes. I didn’t touch them during this time – that’s key to getting a good crust.
The Flip and Finish
- After that, I flipped the steaks and cooked them for another 3-4 minutes for medium-rare.
- I use my finger sometime press the steak to check the level.
- I usually cook a bit longer, that time is just perfect.
Resting
Once they were done, I took the steaks off the grill and placed on a plate. Then – and this is important – I let them rest for about 5-10 minutes. I loosely tent the plate to keep the heat. I heard it helps the juices redistribute, making for a more tender steak. After the rest, time to eat!
