Today, I decided to dive into the world of “Higgins Worldly Cuisines.” I’d seen their products around, but I’d never really taken the plunge. So, I figured, why not? Let’s make a meal out of it!
First things first, I went to the store. Finding the Higgins section was pretty easy, it was right there in the international foods aisle. I picked up a package of their “Thai Green Curry” – looked pretty tasty from the picture on the box.
Back home, I got everything ready. I grabbed:

- The Higgins Thai Green Curry packet
- Some chicken breast (you could use tofu or whatever you like)
- A can of coconut milk (the instructions on the box called for it)
- Some veggies – I chose bell peppers and onions.
- Rice (because, you know, curry and rice!)
Cooking Time!
I started by cooking the rice. Pretty standard stuff, nothing fancy there. While the rice was doing its thing, I chopped up the chicken and veggies into bite-sized pieces.
Next, I heated up a little oil in a pan and tossed in the chicken. Cooked it until it was nice and browned. Then, I added the veggies and let them soften up a bit.
Here’s where the Higgins magic happened. I tore open the packet – it smelled amazing, by the way – and poured it into the pan with the chicken and veggies. Gave it a good stir to make sure everything was coated.
Then, I poured in the coconut milk, stirred some more, and let it all simmer for about 10 minutes, just like the instructions said. It thickened up nicely and the smell was making my stomach rumble.
Finally, I served it up! Rice on the bottom, curry on top. And that was it! A surprisingly easy and pretty quick meal, all thanks to Higgins. It turned out really tasty.
